Ashure, symbolizing sharing, solidarity, and abundance, stands out with its diverse ingredients that reflect the richness of traditions and social life. Dietitian Emine Uluçay emphasized, ‘Among traditional desserts, ashure holds a unique place. When consumed with the right ingredients and in balanced amounts, it is beneficial and nutritious for health. More than just a traditional dessert, ashure symbolizes spiritual, social, and cultural dimensions, taking its place in kitchens starting from the 10th day of the Islamic month of Muharram each year. From its preparation, ashure brings together neighbors, relatives, and friends, strengthening the spirit of unity through the sharing of its unique flavor. Due to its deep meanings, ashure not only nourishes the soul but also benefits the body with a balanced combination of different nutrients.
Dietitian Emine Uluçay, a nutrition consultant at Duru Gıda, highlighted the benefits of ingredients in ashure, where different flavors meet harmoniously. Uluçay pointed out that ingredients like wheat, along with legumes such as kidney beans and chickpeas, and dried fruits like raisins, figs, and apricots, contribute to digestive regularity and provide a feeling of satiety due to their high fiber content. She continued:
‘Ashure contains many vitamins and minerals such as B vitamins, iron, magnesium, zinc, potassium, and calcium. These nutrients support various body functions from energy production to immune system health. Legumes are important for providing plant-based protein necessary for muscle and tissue repair. Dried fruits like raisins, figs, apricots, and pomegranate are rich in antioxidants. Antioxidants protect cells from the damage caused by free radicals, potentially slowing down aging and preventing diseases.’
Regarding the benefits of ashure for sugar and heart patients, Uluçay noted that due to its fiber and complex carbohydrates, ashure does not rapidly increase blood sugar levels, making it particularly beneficial for diabetic patients. Uluçay also highlighted the benefits of walnuts, hazelnuts, and dried fruits for heart health due to their fatty acids and phytochemicals.
